Ingredients

  • steak (cooked, sliced thin against the grain)
  • crusty artisan bread (such as ciabatta or a french roll)
  • onions
  • melty cheese (provolone, brie, gruyere, smoked gouda)
  • greens (arugula or butter lettuce)
  • sauce options (steak/burger sauce, chimichurri, garlic or horseradish mayo)

Instructions

  • Cook your steak: Season, sear, rest and slice thin against the grain.

  • Prepare your mayo, sauces, and any additional ingredients.

  • To make the steak/burger sauce: Combine equal parts mustard, ketchup and mayo.

  • To make the caramelized onions: Peel and slice the onions thickly. Heat oil over medium heat (or use the pan's fat from the steak) and cook the onion slices for about 5 minutes per side, or until caramelized and slightly softened. Season with salt.

  • Toast the bread in the skillet to brown slightly and crisp.

  • Melt the cheese on the sliced steak: Place the cheese on the hot steak to allow it to melt. Optionally, return it to the skillet or place it under the broiler for melting.
