Too many times we end up having a bunch of ripe bananas that we didn't eat during the week. We are big banana bread lovers, so it's usually not a problem. We want to share this easy chocolate chip banana bread recipe with you. I'll let you in on the secret ingredient in this banana bread recipe - a yellow cake mix! Seriously!! It's so easy to make and sure to be a family favorite!

I love having a warm slice of fresh baked banana bread. But I love it even more when it has only 4 ingredients! This is the easiest banana bread I’ve ever made! I didn’t even have to pull out a single measuring spoon or cup. The batter was in the pan and ready to bake before my oven was even heated up!

Do you need to use ripe bananas?

We are often asked about the ripeness of bananas used in banana bread. We don’t enjoy eating overripe bananas, so putting them in smoothies or banana bread is a great option.

It’s fine to let the skin get very dark and almost black. But we don’t use them when the banana inside is black. An overripe banana does get soft or mushy and is the perfect ripeness for bread. The bananas are at their sweetest when the skin is black. That adds to the sweetness of your banana bread.

You do not want to use bananas that still have green on them. Bananas are starting to ripen and turn sweeter when brown spots begin to appear on the skin. If you let them go another few days, they will be at their best for banana bread.

A few easy steps to make Chocolate Chip Banana Bread:

Mix all of the ingredients together and put into a greased loaf pan. We sprinkled a few extra chocolate chips on top.

This recipe can be made in one regular sized loaf pan or 2 smaller loaf pans. Cook at 350 degrees and follow the cooking times in the directions.

Let cool in pan for a few minutes and then you can invert onto a serving plate. Cool for about 15 minutes and then slice and serve. You can let it set for longer before slicing if you want. (It just depends on if you want to eat your bread warm or cooled down)

There's a secret ingredient to this easy chocolate chip banana bread – it turns out perfect every time. It's so easy to make and sure to be a family favorite!

Ingredients

  • 4 bananas ripe
  • 1 15.25 ounce yellow cake mix
  • 2 eggs
  • 1 cup milk chocolate chips

Instructions

  • Smash bananas in a large bowl.

  • Add in yellow cake mix, eggs, and chocolate chips and mix well.

  • Spray pan well with nonstick cooking spray and pour batter into pan. It will fill one regular sized loaf pan or 2 smaller ones.

  • Bake at 350° for 45-50 minutes for one loaf pan, or 35-40 minutes for two small pans.

Notes

  • A white cake mix can work in place of the yellow but the bread coloring will be different.

    I poured these into 18 paper lined muffin cups, sprinkled tops with a bit of raw sugar and baked for 20 minutes. They turned out perfectly and very pretty with the sparkle of sugar.     I've made quite a few different banana recipes but I have to admit, I was slightly skeptical about this one. However, I was in a pinch and needed to make a loaf for work, and happened to have these 4 ingredients on hand. I actually ended up doing 3 mini loaves and they baked up very nicely. Then the taste test.... Delicious!!! Definitely different than other recipes, but I really enjoyed it! Will be making this one again. Thanks!

    I don't usually comment on things like this but I feel I need to. I do not like banana bread but this is very good. My husband loves walnuts in his banana bread so I did add chopped walnuts.     Hi. I followed the recipe (used a white cake mix though) and about a 1/3 of the batter ended up on the bottom of my oven. What was left in the pan was delicious. How full should the loaf pan be? Mine was pretty much to the top. Perhaps the bananas were too big? Any ideas?
