Lazy chicken dinner recipe using packet ingredients and one pan, why not. Life gets in the way sometimes and all you want is something you can just throw in the oven without the fuss. This recipe is so easy a child could make (under supervision of course) All you are doing is mixing au jus mix with ranch seasoning mix, you reduce the seasoning mix before adding it to the chicken breast because it can make the dish salty. Then you bake the chicken in the oven with unsalted butter, pepperoncini, and its juice until it is fully cooked.

This recipe is full of mouthwatering flavors that will have your family and friends asking for more. It's also a great recipe to make ahead of time and reheat later. What you will need to make baked Mississippi chicken

You will need the following ingredients to make Mississippi chicken at home.

Boneless skinless chicken breasts: substitute with boneless skinless chicken thighs

Ranch seasoning mix: use storebought or homemade ranch seasoning. this is not the same as ranch dip mix.

Au jus gravy mix: this should not be mistaken for brown gravy mix

Unsalted butter: It is important to use unsalted butter for this recipe as the seasoning mixes already contain enough salt to flavor and season the chicken.

Pepperoncini peppers: also called Tuscan peppers, these are mild chili pepper that can be found in the pickle aisle of your grocery store. I used sliced ones but you can use whole pepperoncini.

Pepperoncini pepper juice for an extra kick.

How to make baked Mississippi chicken

Preheat the oven to 200C/400F.

In a small mixing bowl, add au jus mix and ranch seasoning mix, and stir to combine. Remove 1½ Tablespoons from the mix and store for later.

Pat the chicken breast dry with a kitchen towel and arrange it on a baking dish in a single layer.

Sprinkle the seasoning on the chicken, flip and season the other side.

Top each of the chicken breasts with cubed butter and pepperoncini, and add the pepperoncini pepper juice to the bottom of the baking dish.

Bake in preheated oven for 35 to 40 minutes or until the internal temperature of the chicken breast reaches 165F/74C.

Remove from oven and let it rest for 5 minutes before slicing into it.

Serve the chicken along with its buttery juice with your favorite sides or as a sandwich or wrap filling. Enjoy!

What to eat with Mississippi chicken

I served my Mississippi chicken along with its juice with mashed potatoes, roasted potatoes, and veggies. You could also serve this chicken with some pasta or rice on the side.

As I mentioned before, this chicken is also great as a sandwich or wrap filling (my preferred way of serving it). Try it in a ciabatta roll with some shredded lettuce, tomatoes, and mayo. So good!

How to store and reheat

This chicken can be stored in an airtight container in the fridge for up to 3 days or in the freezer for up to 2 months. Store leftover with its juice to aid reheating process.

The best way to reheat it is in the oven at 350F/175C oven until heated through. You could also reheat it in the microwave if time is of the essence.

Can I use chicken thighs for this recipe

Yes, you can but I recommend you remove the skin since the recipe is baked with butter to make it somewhat healthier.

Will this recipe work with the air fryer

Yes, traditionally this recipe is made with roast beef, it is known as Mississippi pot roast. It has however evolved since and is now made with chicken to make it healthier. So, back to the question, you can make chicken Mississippi in the crockpot.
